Quinoa Salad with Cumin-Lime Vinaigrette

Ingredients

Instructions

  1. Cook the quinoa according to package instructions. Let it stand for 10 minutes, then fluff with a fork. Set aside to cool.
  2. In a small jar with a lid, combine the olive oil, lime juice, Dijon mustard, honey, garlic, cumin, salt, and chipotle chili pepper. Whisk or shake well to combine, then set aside.
  3. In a large bowl, combine the cooled quinoa, black beans, corn, tomatoes, shallot, avocado, feta cheese, and cilantro.
  4. Add the cumin-lime vinaigrette and stir gently to coat.
  5. Cover and chill at least 30 minutes before serving. Garnish with fresh cilantro or lime wedges if desired.
