Early in her career as a registered dietitian nutritionist, Beth practiced at a weight management center where patients were subjected to uncomfortable appointment weigh-ins, daily calorie counting/food recalls, and impractical meal plans. As a result of this experience, she saw first-hand how physically, emotionally and mentally draining this approach was and knew there had to be a better way to help clients reach their nutrition and health goals.
Fast-forward a few years when Beth, alongside a RD counterpart, dreamt up the 5-to-Thrive; a one-of-a-kind wellness journey towards a healthier and happier lifestyle that they collectively offered as a group coaching program. When life and location changes happened later that year, this program was shelved, and the duo embarked on different career paths. Today, Beth has reignited this philosophy and works one-on-one with clients to guide them on a refreshingly positive wellness journey that aligns with the core principles of intuitive eating.
Beth’s Approach
As part of the team at Connections Relational Therapy, Beth offers nutrition coaching sessions, centered on intuitive eating, in-person and virtually, to clients in Pennsylvania via a secure, HIPAA-compliant telehealth platform called Healthie.
The 5-to-Thrive approach and intuitive eating are right for you if your goals are to:

While you may lose weight as result of your healing work with Beth, weight loss is NOT the ultimate goal, nor is it a measure of success. Furthermore, you will absolutely NOT:
Be placed on a “diet”
Told to restrict foods you love
Encouraged to weigh and measure what you eat
Count calories
Feel shame for your food choices
Follow a calorie-controlled meal plan
Instead, you will be armed with support and resources to help you cease the “diet” mentality, let go of food rules, and learn to nourish your body intuitively with a variety of foods that please your taste buds and power your happy and active lifestyle.
Nutrition Services
Making the time and financial commitment needed to improve your health and well-being can feel like a large investment when you first begin. While Beth Stark Nutrition is a self-pay, out-of-network provider, she fully understands and appreciates all that goes into making the decision to prioritize your health and is willing to work with you to explore payment options that fit your needs. She will also happily provide you with a Superbill to submit to your insurance company for full or partial reimbursement.
It’s strongly recommended that you call your insurance company first to determine coverage of out-of-network nutrition benefits with a registered dietitian nutritionist.
Exploration Session
Make sure this approach is the right fit for you. Schedule a 15-minute exploration session where you will provide a high-level look at what you hope to achieve by participating in nutrition services with Beth Stark Nutrition. I will share an overview of what you can expect through your work with me, and together, we will determine the best course of action to set you on the path of eating and living well.
Individual Consultation Session
Our first appointment together is a chance for us to get to know each other. We’ll take a deep dive into your nutrition and health goals to devise a personalized plan for getting started and moving forward. This appointment is intended to be a low-stress and enjoyable one that celebrates where you have come from and where you are going. The intention is that you will leave our time together feeling energized, optimistic, and empowered about the journey that lies ahead! HIPAA-secure email and chat support included as needed.
Follow Up Session
Here’s your chance to reflect on the progress you’ve made and identify any barriers that may have arisen. Together, we’ll identify tools for continued success. HIPAA-secure email and chat support included as needed.
Meal Planning
You have the best intentions of creating a meal plan for the week, doing the grocery shopping and cooking at home, but are challenged to make it happen. You’re not alone! Let Beth do the heavy lifting as she curates a menu of recipes based on your family’s health, flavor and lifestyle food preferences for the meals and snacks that make up your typical routine. Over time this habit of meal planning will save you time, stress, and money while nourishing you and your family with meals that fit into your busy routine. Grocery Store Walk-and-Talk
Feeling overwhelmed with the task of grocery shopping for the most healthful, affordable and practical selections to fill your cart? Invite Beth along on your upcoming grocery run and she will help you learn how to navigate the aisles with ease, leaving with a cart-ful of foods that fit your budget and fuel your family right.
Cooking Class
Exploring new foods and flavors is a fun way to shake things up in the kitchen. Learning to prepare unfamiliar foods is also an effective way to enhance the nutrient quality of your diet because it broadens the types of foods that appear on your plate.
