Mini Veggie and Chicken Sausage Mini Frittatas

  1. Preheat oven to 375°F and spray a standard 12-cup muffin tin with cooking spray.
  2. In a large bowl, whisk the eggs thoroughly.
  3. Stir in the bell pepper, tomato, arugula, chicken sausage, Italian seasoning, and garlic powder until combined.
  4. Mixed in the cheese and chives.
  5. Spoon approximately ¼ cup of the egg mixture into each muffin cup.
  6. Bake for 20 minutes, or until the eggs are set. Let cool for 10 minutes before removing from the muffin tin.

Notes

Serving Suggestion: Serving with a toasted whole grain English muffin on the side or layer English muffin with a frittata to make an egg sandwich.
