
Mini Veggie and Chicken Sausage Mini Frittatas

- Preheat oven to 375°F and spray a standard 12-cup muffin tin with cooking spray.
- In a large bowl, whisk the eggs thoroughly.
- Stir in the bell pepper, tomato, arugula, chicken sausage, Italian seasoning, and garlic powder until combined.
- Mixed in the cheese and chives.
- Spoon approximately ¼ cup of the egg mixture into each muffin cup.
- Bake for 20 minutes, or until the eggs are set. Let cool for 10 minutes before removing from the muffin tin.
Notes
Serving Suggestion: Serving with a toasted whole grain English muffin on the side or layer English muffin with a frittata to make an egg sandwich.
