- Preheat oven to 375°F.
- Arrange chickpeas on a large, rimmed baking sheet.
- Using a clean dishcloth or paper towels, roll chickpeas over the baking sheet to dry and loosen shells. Remove and discard as many shells as possible so the chickpeas turn nice and crispy when roasting.
- Transfer chickpeas to a large bowl.
- Add olive oil, dill, onion powder, garlic powder, and salt. Stir well to evenly coat.
- Return chickpeas to baking sheet in a single layer.
- Bake 40 minutes, stirring twice. Turn off the heat and let chickpeas cool at least 10 minutes in the oven. Remove from the oven and cool completely.
- Store in an airtight container and eat within three days for the crispiest texture.
