No-Bake Crispy Rice and Oat Bars

Kid-Friendly Tip:Kids love packaged granola bars and these easy, no-bake ones are sure to become a favorite! Oats, raisins and chia seeds give these bars a boost of fiber to keep hunger at bay between meals and the combo of peanut butter and chocolate chips gives them a dessert-like flavor.

  1. Line an 8 x 8-inch baking pan or dish with parchment paper.
  2. In a small saucepan over medium heat, melt peanut butter with honey until thinned out and smooth; about 5 minutes. Remove from heat. Stir in chia seeds and vanilla extract.
  3. In a large bowl, combine crispy rice and oats.
  4. Pour peanut butter mixture over cereal mixture. Stir gently until evenly coated.
  5. Add raisins and coconut. Stir until evenly coated.
  6. Transfer mixture to prepared pan and very firmly press it into an even layer. The firmer you press, the better the bars will stick together.
  7. Sprinkle with mini chocolate chips and press them evenly into the bars.
  8. Chill bars at least one hour before cutting evenly into 16 squares with a sharp knife. Store cut bars in the refrigerator to best retain their shape and crispy texture. Enjoy within one week.
