
No-Bake Crispy Rice and Oat Bars

Kid-Friendly Tip:Kids love packaged granola bars and these easy, no-bake ones are sure to become a favorite! Oats, raisins and chia seeds give these bars a boost of fiber to keep hunger at bay between meals and the combo of peanut butter and chocolate chips gives them a dessert-like flavor.

- Line an 8 x 8-inch baking pan or dish with parchment paper.
- In a small saucepan over medium heat, melt peanut butter with honey until thinned out and smooth; about 5 minutes. Remove from heat. Stir in chia seeds and vanilla extract.
- In a large bowl, combine crispy rice and oats.
- Pour peanut butter mixture over cereal mixture. Stir gently until evenly coated.
- Add raisins and coconut. Stir until evenly coated.
- Transfer mixture to prepared pan and very firmly press it into an even layer. The firmer you press, the better the bars will stick together.
- Sprinkle with mini chocolate chips and press them evenly into the bars.
- Chill bars at least one hour before cutting evenly into 16 squares with a sharp knife. Store cut bars in the refrigerator to best retain their shape and crispy texture. Enjoy within one week.
