
One-Skillet Vegetarian Chili Mac

- Heat oil in a 10-inch skillet over medium heat.
- Add bell pepper, onion, and jalapeño pepper. Cook, stirring occasionally, until softened; about 5 minutes.
- Stir in garlic, smoked paprika, chili powder, and cumin; cook 1 minute.
- Stir in broth, tomatoes, and beans. Increase heat to medium-high and bring to a boil.
- Stir in macaroni pasta. Cover and reduce heat to low. Cook 12 minutes, or until pasta is tender and liquid has absorbed.
- Remove from heat and sprinkle with cheese. Cover and let stand 5 minutes until cheese melts.
- Top with desired garnishes before serving.
