One-Skillet Vegetarian Chili Mac

Instructions

  1. Heat oil in a 10-inch skillet over medium heat.
  2. Add bell pepper, onion, and jalapeño pepper. Cook, stirring occasionally, until softened; about 5 minutes.
  3. Stir in garlic, smoked paprika, chili powder, and cumin; cook 1 minute.
  4. Stir in broth, tomatoes, and beans. Increase heat to medium-high and bring to a boil.
  5. Stir in macaroni pasta. Cover and reduce heat to low. Cook 12 minutes, or until pasta is tender and liquid has absorbed.
  6. Remove from heat and sprinkle with cheese. Cover and let stand 5 minutes until cheese melts.
  7. Top with desired garnishes before serving.
