- Preheat oven to 375°F.
- Spray a 9-inch pie dish with cooking spray.
- In a large bowl, whisk eggs, milk, hummus, dill, shallot, and black pepper.
- Fold in spinach, tomatoes, and ¼ cup of feta cheese.
- Pour mixture into the prepared pie dish.
- Sprinkle with remaining ¼ cup of feta cheese crumbles.
- Bake 30 minutes or until eggs are set and frittata is lightly browned.
- Let stand 5 minutes before cutting into 6 pieces.
