Sheet Pan Chicken Meatballs and Vegetables with Peanut Sauce

Instructions

  1. Preheat oven to 400°F. Spray a large, rimmed sheet pan with non-stick cooking spray.
  2. In a large bowl, stir breadcrumbs, green onions, hoisin sauce, ginger, and garlic.
  3. Add ground chicken. Mix gently until combined. Shape mixture into 12 meatballs and place around the outside edge of the sheet pan
  4. Add green beans and bell pepper to the middle of the sheet pan. Toss with olive oil and garlic powder.
  5. Bake 25 minutes, or until meatballs reach a minimum internal temperature of 165°F, and vegetables are tender, stirring vegetables once halfway through cooking.
  6. Meanwhile in a small bowl, whisk peanut butter, soy sauce, lime juice, ginger garlic powder, and crushed red pepper flakes until smooth.
  7. Serve meatballs and vegetables with two tablespoons of peanut sauce over cooked rice, if desired.
