
Sheet Pan Chicken Meatballs and Vegetables with Peanut Sauce

Instructions
- Preheat oven to 400°F. Spray a large, rimmed sheet pan with non-stick cooking spray.
- In a large bowl, stir breadcrumbs, green onions, hoisin sauce, ginger, and garlic.
- Add ground chicken. Mix gently until combined. Shape mixture into 12 meatballs and place around the outside edge of the sheet pan
- Add green beans and bell pepper to the middle of the sheet pan. Toss with olive oil and garlic powder.
- Bake 25 minutes, or until meatballs reach a minimum internal temperature of 165°F, and vegetables are tender, stirring vegetables once halfway through cooking.
- Meanwhile in a small bowl, whisk peanut butter, soy sauce, lime juice, ginger garlic powder, and crushed red pepper flakes until smooth.
- Serve meatballs and vegetables with two tablespoons of peanut sauce over cooked rice, if desired.
