Instructions
- Preheat oven to 425°F and spray a large, rimmed baking sheet with cooking spray.
- In a small bowl, combine chili powder, cumin, garlic powder, smoked paprika, chipotle chili pepper and salt.
- Combine oil and lime juice with spice mixture and stir until blended.
- Place chicken, peppers, onion and beans in a large bowl. Add seasoning mixture and toss well to coat.
- Arrange chicken, vegetables and beans on prepared baking sheet in a single layer.
- Bake on the top rack 30 minutes, stirring occasionally, until chicken reaches a minimum internal temperature of 165°F and vegetables are tender.
- Serve in corn tortillas with desired toppings.
