Instructions

  1. Preheat oven to 425°F and spray a large, rimmed baking sheet with cooking spray.
  2. In a small bowl, combine chili powder, cumin, garlic powder, smoked paprika, chipotle chili pepper and salt.
  3. Combine oil and lime juice with spice mixture and stir until blended.
  4. Place chicken, peppers, onion and beans in a large bowl. Add seasoning mixture and toss well to coat.
  5. Arrange chicken, vegetables and beans on prepared baking sheet in a single layer.
  6. Bake on the top rack 30 minutes, stirring occasionally, until chicken reaches a minimum internal temperature of 165°F and vegetables are tender.
  7. Serve in corn tortillas with desired toppings.
