  1. Heat oil in a soup pot over medium-low heat.
  2. Add carrots and onion. Cook, stirring occasionally, until softened; about 4 minutes.
  3. Stir in garlic, thyme, salt, and black pepper. Cook 1 minute.
  4. Stir in broth, cooked chicken, and tortellini. Bring to a boil, then reduce heat to low. Simmer uncovered for 10 minutes, while stirring occasionally.
  5. Stir in spinach and lemon juice. Cook 1 minute until spinach is wilted.
  6. Serve immediately.
