Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add onion and cook until translucent; about 4 minutes.
  3. Add garlic, carrots and celery; cook until softened and fragrant; about 5 minutes.
  4. Season with Italian seasoning, salt and pepper.
  5. Stir in beef stock, crushed tomatoes, diced tomatoes and kidney beans; bring to a boil, then reduce heat and simmer about 10 minutes.
  6. Add macaroni and kale; simmer until pasta is cooked through and kale is tender; about 12 minutes, stirring occasionally.
  7. Ladle soup into bowls and garnish with shaved Parmesan cheese.
