
Cajun Shrimp and Sausage Rice Skillet

- Heat olive oil in a large skillet over medium heat.
- Add bell pepper, onion, celery and, garlic. Cook, stirring occasionally, until softened; about 5 minutes,
- Add chicken sausage. Cook, stirring occasionally until lightly browned; about 4 minutes.
- Stir in Cajun seasoning. Cook 1 minute.
- Stir in tomatoes, broth, and rice. Increase heat to high and bring the mixture to a boil, then reduce heat to medium low. Cover and cook 10 minutes, or until liquid is absorbed and rice is cooked through.
- Stir in shrimp. Cover and cook 5 minutes more, or until the shrimp are fully cooked.
- Garnish with fresh lemon juice before serving.
