Cajun Shrimp and Sausage Rice Skillet

  1. Heat olive oil in a large skillet over medium heat.
  2. Add bell pepper, onion, celery and, garlic. Cook, stirring occasionally, until softened; about 5 minutes,
  3. Add chicken sausage. Cook, stirring occasionally until lightly browned; about 4 minutes.
  4. Stir in Cajun seasoning. Cook 1 minute.
  5. Stir in tomatoes, broth, and rice. Increase heat to high and bring the mixture to a boil, then reduce heat to medium low. Cover and cook 10 minutes, or until liquid is absorbed and rice is cooked through.
  6. Stir in shrimp. Cover and cook 5 minutes more, or until the shrimp are fully cooked.
  7. Garnish with fresh lemon juice before serving.
