Tuscan Pasta with Lemon Sauce

Instructions
- Bring a large pot of water to a boil over high heat. Add pasta; cook according to package directions. Drain, reserving ½ cup water, and keep warm.
- In a large skillet, heat oil over medium heat. Add garlic; cook 2 minutes or until fragrant, stirring occasionally. Add sun-dried tomatoes, spinach and cannellini beans; cook 3 minutes until spinach has wilted. Stir in reserved pasta water, lemon juice, lemon zest, salt and pepper. Add cooked pasta; toss to coat. Cook 5 minutes or until heated through, stirring occasionally.
- Serve with fresh basil and shaved Parmesan cheese.
Notes
Health Tip: To keep blood sugar level steady on pasta night, choose whole grain pasta that has more fiber and add your favorite plant-based protein, like beans, or lean protein like chicken or fish. The combo of fiber + protein helps to prevent blood sugar spikes.
